4In a medium bowl, combine coleslaw mix , mayonnaise , sour cream , lime zest (from half of the lime), remaining lime juice, half the corn (from step 1), remaining Southwest Spice Blend , and sugar (the remaining 1/2 tsp). 5Halve and toast potato buns . While buns toast, heat a drizzle of cooking oil in a large pan over medium-high heat. Add the chopped onion and a pinch of salt; cook, stirring, until softened and translucent, 3-5 minutes. Add garlic and cook, stirring, until fragrant, ⏱️ 30 seconds . Stir in black beans and their liquid and the sauce mixture. Using a wooden spoon or spatula, roughly mash beans (mash part but leave some whole!).
